2 oz. of Light Rum

3/4 oz of Freshly Squeezed Lime Juice

1 Teaspoon of Sugar

To prepare:

In a cocktail shaker, stir the lime juice and the sugar until the latter dissolves. Add the rum and fill with ice. Shake for ten seconds and strain into a cocktail glass. Preferably chilled. To garnish, add a wedge of lime.

GINGER LEMONGRASS PINA COLADA

Pina (or Piña) Colada is a very popular drink. This ginger lemongrass version is a tasty way to surprise your guests and change it up!

Ingredients you’ll need for 4 servings:

1 Stalk Lemongrass

¾ cup Peeled and Sliced Fresh Ginger

½ cup Sugar

Ice

2 cups Pineapple Juice, chilled

1 cup Coconut Milk

1 cup White Rum, chilled

Pinch of Salt

4 Fresh Mint Sprigs

To prepare:

To get the inside fibers of the lemongrass exposed, grab a heavy knife and with the back of it, put pressure on the lemongrass stalk. Cut the fibers into 1-inch long pieces.

In a small saucepan, simmer the lemongrass, ginger, sugar and ½ cup of water. Cook until the sugar has dissolves. Remove from heat and leave for 20 minutes.

We only need the syrup, so strain it into a large bowl with the ice and whisk away. Stop when it has cooled.

Now get the blender and blend the syrup, coconut milk, rum and pineapple juice.

Pour into a glass and garnish with a mint sprig.


WATERMELON MARTINI

½ cup of Sugar

½ cup of Water

5 cups Watermelon (no seeds)

2 oz. Melon Liqueur

In a small saucepan, boil the water and sugar until it dissolves. Let is cool down.

We need to puree the watermelon (no skin) in a food processor. Add some of the syrup and freeze in empty ice cube trays for 4 hours.

Put the lemon juice, vodka, syrup, the frozen watermelon juice, melon liqueur and blend. Once it is smooth, pour into martini glasses and add a lemon twist.

2 Ripe Peaches, seeded and diced
